tandoori baked chicken

One of the easiest meals to prepare is baked marinated chicken with a side of stir fried vegetables. After trying a few different marinades, I have come up with my own and am sharing it with you! 

The best meat to use for this are leg and thigh pieces, skin removed. The following recipe is enough for 8 medium sized pieces. Once you've cleaned the chicken, make 3 to 4 slits on the top of each piece to enhance the flavor while baking.

Then, mix the following in a bowl:

  • 2 tbsp of tandoori paste

  • 2 tbsp of cumin powder

  • 2 tbsp of coriander powder

  • 1 tbsp of garlic powder

  • 1 tbsp of ginger powder

  • 4-5 tsp of curry powder (4 tsps if you want it mildly spicy, 5 tsps if you want it spicier)

  • 4 tsp of salt

  • 4 tsp of red chili powder

  • 2 tsp of black pepper

  • juice of 1 lemon

  • juice of 1 lime

  • 6-7 tbsp of olive oil

  • a few tbsp of water if it is too thick

  • a handful of chopped cilantro


Once you have the marinade all mixed, start rubbing it on the meat. I usually do this in a larger bowl and use plastic kitchen gloves. I find that it's better to use your hands to really get the marinade distributed evenly. I put 1 or 2 leg pieces in the large bowl and add a spoon or two of the marinade and mix until they are well coated and continue the same way until all the pieces are done. 

After that, you'll need to refrigerate the meat for at least an hour before baking. At this point, I put 4 of the leg pieces in the freezer for future use and the remaining 4 in the fridge. The marinated chicken freezes fine and I usually just take it out to thaw in the fridge the night before I am going to make it.

Once you are ready to bake, preheat your oven to 400 and take out the chicken from the refrigerator while you wait for the oven to be ready. The chicken will take about 45-60 minutes to bake. You will have to check it every 20 minutes or so and turn the sides as well. During the last 10-15 minutes of bake time, I like to drizzle some lemon or lime juice on all the pieces to add some extra flavor. Try it- it is so worth it!

The very last thing I do once it is all done and ready to serve is garnish it with come cilantro.
