quinoa veggie salad
Quinoa is a grain like seed used in a range of different dishes like salads, stir fry, omelettes, pancakes and meatballs to name a few.
I've been trying to incorporate quinoa in our monthly meals and am slowly making progress. Here's an easy salad to put together packed with tons of vegetables that will leave you pretty full until your next meal.
Quinoa Vege Salad
1 cup tri-color quinoa
1 cup corn (slightly toasted)
1 red bell pepper (chopped)
1 can black beans (14 oz)
1/4 cup banana peppers (chopped)
1/2 cup grape/baby tomatoes (chopped)
1/3 cup green onions (chopped)
1/4 cup Kalamata olives (chopped)
1/3 cup cucumber (chopped)
*Optional: Cilantro (for garnish)
For the marinade:
juice of 1 lime
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp ground cumin
Cook quinoa according to directions, fluff with fork.
Meanwhile, slightly toast corn and let it cool. Next, chop all other ingredients and set aside.
Once quinoa is cooked, place it in a bowl to cool completely.
Then, mix all the ingredients for the marinade in a large bowl. Next, you'll want add all the vegetables to the marinade and let it sit while quinoa finishes cooling down.
Add the quinoa to the bowl now and gently mix using a fork.
Finally, garnish with cilantro if desired.
